“I was inspired by classic Victorian pubs in the U.K., particularly the Cafe Royal in Edinburgh,” says owner Jamie Schmitz. He worked with design firm De-Spec and had everything custom built by local artisans, though it was very much a family affair. His mother contributed the vintage floral wallpaper; his father brought the antique wood-burning stove; and the painting of the Highland boy by Thomas Austen Brown depicts his great-uncle Thomas Macrae.
